Cool Summer Recipes from Club Members


Periodically throughout the summer, we’ll be featuring some cool summer recipes from club members, although this very first recipe might actually be a bit more ‘hot’ than cool. Outgoing LWC co-president Donna Saunders says it’s been a favorite at many community parties lately. Check it out:


  • 1/2 cup Frank’s Red Hot Original
  • 1/2 cup ranch dressing
  • 1/2 cup shredded mozzarella cheese
  • 1 can chunk white chicken (size larger than a tuna can), drained and shredded
  • 1 8 oz. cream cheese

Combine all ingredients (Donna breaks up the cream cheese) in an 8″ x 8″ or 9″ x 8″ pan. Microwave on high for 5 minutes, then stir and serve with tortilla chips or crackers. Donna recommends using disposable Hefty microwave containers to really make things easy while entertaining this summer.   ENJOY!


2011 LWC Scholarship Awards


The Litchfield Women’s awarded five $250 scholarships to Campbell High School seniors at the school’s annual Senior Awards Night on June 8th. Each year, the club offers scholarships based on academic merit and community service involvement. To date, the Litchfield Women’s Club has presented over $16,000 in scholarship funds to deserving Litchfield students, and raises funds through its annual Easter Bunny Breakfast event for scholarship awards.

Scholarships were presented by LWC member Claire Regan to the following students: Cassandra Baron, Andrew Boutselis, Courtney Gannon, Heather Geist, and Matthew Raffferty.
